Our Story
Oliver Charles has devoted his life to butchery. Born and trained in Ireland, he mastered traditional techniques before bringing his craft to New York in 1976. In 2001, he and his wife, Elizabeth, fulfilled their dream of opening The Butcher’s Fancy—a shop built on heritage, quality, and family values.
For over 40 years, Oliver and Elizabeth have worked side by side, raising four children—each of whom has spent time in the store. Today, one of their children continues to help run the business, ensuring that the legacy of The Butcher’s Fancy remains strong for the next generation.
